PRODUCTION:
Produced exclusively from selected parcels in our 600 ha estate in Uclés (Castile, Spain). The high-altitude vineyards are sustainably and organically farmed, with no use of pesticides and minimal treatments.
Plots: Ensancha & Cerrosol
Both varieties are picked and fermented separately in stainless steel tanks at 16 ℃. The two varieties are blended each year in varying proportions to achieve an intriguing combination of the more full-bodied, intense Sauvignon Blanc with a fresher, more austere Verdejo. After blending, the wine remains on its fine lees for 4 months for a rounder, fuller mouthfeel.
